I discovered the most awesome website on the planet while reading Island Baby's blog, the other day. I am one of those people who stands in front of the fridge or pantry for minutes on end, sighing and saying, "hmmmmmm....." while I try to figure out what the heck I am going to make for dinner. I didn't really realize I did this until Gracie, only 18 months old at the time, opened up the pantry and stood there saying, "hmmmmmm....." Marisa-style.
Well, no more! Now whenever I open the pantry or fridge, it will be to check for ingredients that I can plug into CookingByNumbers.com (aka the most awesome website on the planet-- I kid you not) to come up with recipes involving only the items I have on hand.
I tried it out tonight when I was at a serious loss about what to make for dinner. Then I pulled out my darling little casserole dish, threw in the ingredients and VOILA!! Chicken and Potato Pie!
Gracie, Annelie and I gobbled it up in no time, as it was just delicious (Will is a vegetarian, so he was on his own for dinner tonight!!-- Actually he works the late shift, so he wasn't even home, anyway).
Here is what I did to make a fabulous dinner. I kind of embellished the recipe a little, in order to get more veggies in.
Ingredients:
One chicken breast, grilled in olive oil and garlic
Two large potatoes, peeled and grated
One medium onion, grated
Two large carrots, grated
Cheddar cheese, grated
1 egg
Preheat oven to 350
Mix all ingredients, except for the cheese, in a casserole dish. Bake one hour. Sprinkle cheese over top, bake until melted.
Serve.
Mmmmmm... total comfort food!
